These 40-pin 2x20 male headers can be used on a Pi Zero or a pHAT to break out the pins.
You can choose either straight or at a 90° angle.
Add one to a Pi Zero for compatibility with HATs (which use a female header).
Can be used to solder a Pi Zero and pHAT permanently together.
The 90° version is great for mounting inside projects at a right-angle or for routing wiring back underneath a HAT where space is at a premium but you don't want to solder wires directly onto your precious boards.
Note: You should be competent at soldering before attempting to add a right-angle header, they can be a little tricky.

Headers
Rows of connector contacts on a fixed pitch (commonly 2.54 mm) used to link a board to a breadboard, jumper wires, or another board. They come as male pin headers and female socket headers; when a module ships with pre-soldered headers it can be used straight away, whereas bare pads require soldering the pins yourself.
pHAT
A smaller add-on board format for Raspberry Pi, similar in idea to a HAT but usually not full-sized. It matters because pHAT compatibility can affect how neatly a board stacks or fits into a Raspberry Pi project.
